Super simple, but so delicious! These burrito bowls will be ready in less than 30 minutes— the perfect weeknight meal that also make great lunches if you have leftovers. This recipe is easy, healthy, and satisfies that Chipotle or Qdoba craving!

Easy Cilantro Lime Burrito Bowls

INGREDIENTS:
- 1 cup basmati rice (or rice of choice)
- 1 lb ground beef
- Homemade Seasoning Blend: 1 teaspoon chili powder, 1 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon oregano, 1/4 teaspoon cayenne pepper, 1/2 teaspoon sea salt
- 1 15-ounce can black beans, rinsed and drained
- 1 15-ounce can corn, rinsed and drained
- 1 cup cilantro, chopped
- 2 green onions, diced
- 1/2-1 cup shredded cheddar or jack cheese (depending on how cheesy you like it)
- 2 tablespoons lime juice
- 1 avocado
- 1/2 cup pico de gallo (or salsa of choice)
- Hot sauce to taste
DIRECTIONS:
- Cook rice according to package instructions.
- Meanwhile, heat a large pan over medium heat. Add ground beef and homemade seasoning blend and cook until just about done.
- Stir in rice, black beans, corn, cilantro, green onions, cheese, and lime juice until everything is heated through and cheese is melty.
- Top with avocado, salsa, and hot sauce. Enjoy!
