Simple + nourishing with a twist on taco night! Slightly creamy with tons of flavor, this is the ideal weeknight meal if you’re craving Mexican food (but want to be healthy!)

Healthy Stovetop Taco Pasta

Cook Time: 30 minutes
INGREDIENTS:
- 8 ounces pasta
- 1 lb ground beef (or turkey)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon sea salt
- 1 small yellow onion, diced
- 1-2 jalapeños, diced + seeded (omit if you don’t like spicy)
- 15 ounce can tomato sauce
- 1 cup plain greek yogurt (I like to use full fat)
Serve with (optional)—
- Cilantro
- Green onion
- Avocado
- Shredded cheese
DIRECTIONS:
- Cook pasta according to package instructions. Meanwhile, heat a large skillet over medium-high heat. Begin browning ground beef and add seasoning.
- After 6-8 minutes, make an opening in the center of the pan and sauté onion and jalapeños. Continue cooking until the beef is cooked through and onion is translucent and fragrant, stirring occasionally.
- When pasta is finished cooking, add to pan with beef and stir together. Rinse out the pot used to cook the pasta, add tomato sauce and yogurt, and bring to a simmer over medium heat, stirring frequently.
- Once the sauce is heated through, add to pan with beef and stir together. Top with cilantro and green onion if desired. Enjoy!
