These healthy sweet potato cookies are hands-down my favorite healthy cookies I’ve ever made! Moist and fluffy with just the right amount of sweetness and the perfect blend of spices/flavors (think cinnamon, nutmeg, ginger, vanilla, maple, + sea salt!) Not to mention they are kiiiind of adorable… These treats happen to be gluten-free and dairy-free, and they are packed with fiber + nutrients from the sweet potatoes and oat flour. If you love sweet potatoes, you NEED these cookies in your life!

Nourishing, healthy ingredients
This recipe has no refined oils, butter, gluten, or dairy, and only has 1/4 cup brown sugar (but you could swap coconut sugar if you wanted!) These cookies are great as a snack or dessert (or hey, even breakfast!) because they have good-for-you ingredients but are *so satisfying.*
- 1 cup of mashed sweet potatoes (I like to bake mine at 425 degrees until very fork tender ~45-60 minutes, peel the skin off, and then blend them with an electric handheld mixer)
- Coconut oil— I get this kind and love it!
- Pure maple syrup
- Oat flour— I like to grind these oats up in my Nutribullet to make my own oat flour. It’s super quick and usually more economical!
- The ideal blend of spices/flavors— cinnamon, nutmeg, ginger, vanilla, + sea salt!
I like to scoop about a tablespoon of dough into a cookie scoop and place onto a parchment-lined baking sheet. They turn out perfectly fluffy (and just too cute in my opinion). Here’s what they look like before popping into the oven!


Healthy Sweet Potato Cookies
Serving Size: Makes 20-24 cookies
Prep Time: 15 minutes
Bake Time: 8-10 minutes
INGREDIENTS:
- 1/4 cup coconut oil
- 1/4 cup brown sugar
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup sweet potato purée
- 1.5 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon sea salt
- 1.5 cups oat flour
DIRECTIONS:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper or coat with non-stick cooking spray.
- In a large bowl, whisk together coconut oil, brown sugar, maple syrup, and vanilla extract. Whisk in the egg. Stir in sweet potatoes until smooth.
- Stir in baking powder, baking soda, cinnamon, nutmeg, ginger, and sea salt. Once smooth and combined, stir in the oat flour.
- Form into 1-inch balls (I like to use a cookie scoop!) about 1-2 inches apart. Bake for 8-10 minutes.
