This recipe is so easy, it’s hardly a recipe. And the result is juicy, tender shredded chicken perfect for pulled chicken sandwiches, enchiladas, salads, grain + veggie bowls, casseroles, etc. Truly the best crockpot shredded chicken— quick, simple, and cooked to tender perfection every time!
Feel free to add your own spices and seasoning depending on what you’re planning to use your chicken for! This recipe is basic and versatile (but delicious as is!) and only uses salt, pepper, garlic powder, and onion powder.
Perfect Crockpot Shredded Chicken
Serving Size: Approximately 4-5 cups shredded chicken
Total Time: 2.5 hours
- 2 lbs boneless, skinless chicken thighs
- 3/4 cup water
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Add all ingredients to a slow cooker and cook on high for 2.5 hours.
- Remove chicken from slow cooker and shred with 2 forks.
- Enjoy however you’d like! (Think sandwiches, enchiladas, salads, grain + veggie bowls, etc!)
