Veggie Sausage Tortellini Soup

INGREDIENTS:
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 lb mild Italian sausage
- 2 tablespoons Italian seasoning
- 1 teaspoon fennel seeds
- 1 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 4 carrots, chopped
- 2 celery stalks, chopped
- 6 cups low-sodium vegetable stock
- 16 ounces cheese tortellini (you can use more or less depending on how you like the tortellini to broth ratio)
- 1 cup whole milk (or milk of choice)
- 1/2 cup shredded parmesan cheese (freshly grated is best!)
DIRECTIONS:
- Heat olive oil in a large pot over medium-high heat. Add Italian sausage and cook until just a little pink remains.
- Push sausage to edges of pot, and add onion and garlic to the center. Sauté for 3 minutes.
- Stir in seasonings, carrots, celery, and vegetable broth. Reduce heat to medium and simmer for about 20 minutes or until carrots are tender.
- Reduce heat to low and stir in milk and cheese, cooking for 5-10 minutes. Add tortellini during the last few minutes and cook until softened or according to package instructions. Once everything is heated through and well combined, serve and enjoy this cozy meal!
