Veggie Sausage Tortellini Soup

A hearty combination of fresh veggies, Italian sausage, fluffy tortellini, fresh parmesan, delicious herbs, and a touch of creaminess— this soup is the perfect nourishing comfort meal!

Veggie Sausage Tortellini Soup

Total Time: 45 minutes


  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 lb mild Italian sausage
  • 2 tablespoons Italian seasoning
  • 1 teaspoon fennel seeds
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • 4 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups low-sodium vegetable stock
  • 16 ounces cheese tortellini (you can use more or less depending on how you like the tortellini to broth ratio)
  • 1 cup whole milk (or milk of choice)
  • 1/2 cup shredded parmesan cheese (freshly grated is best!)


  1. Heat olive oil in a large pot over medium-high heat. Add Italian sausage and cook until just a little pink remains.
  2. Push sausage to edges of pot, and add onion and garlic to the center. Sauté for 3 minutes.
  3. Stir in seasonings, carrots, celery, and vegetable broth. Reduce heat to medium and simmer for about 20 minutes or until carrots are tender.
  4. Reduce heat to low and stir in milk and cheese, cooking for 5-10 minutes. Add tortellini during the last few minutes and cook until softened or according to package instructions. Once everything is heated through and well combined, serve and enjoy this cozy meal!
